This is one of those dishes that is so impressive and tastes like you spent all day making it, but really it takes no take to get in the oven. This is great served over Spanish rice or with a side of black beans and corn.

- 2 cups pico de gallo
- 1 cup Monterey Jack cheese
- 1/4 tsp. garlic powder
- 2 lbs. chicken breasts
- 1/4 tsp. cumin
- 1/4 tsp. salt
- 1/4 tsp. ground black pepper
Instructions:
- Preheat oven to 375 degrees Fahrenheit.
- Place chicken breasts in the bottom of a 9x13 baking dish.
- Combine salt, pepper, garlic powder, and cumin. Sprinkle spices over chicken breasts.
- Spread pico de gallo over spiced chicken breasts.
- Sprinkle Monterey Jack cheese over pico de gallo.
- Bake for 35-45 minutes, or until the thickest portion of the chicken breast is 165 degrees.
- Garnish with fresh chopped cilantro, if desired.
