Slow Cooker Ritz Chicken

Maybe just add 1 more cup of shredded cheese? I like the way the cream cheese melts and makes it so creamy. Maybe you can use provolone as well as cheddar? It would melt better and give it a better consistency I think.

The video shows the cracker combo going in after a cooking period had already begun. The instructions say to put in on the top for the duration of cooking time. Which is it?

I actually did it both ways, and they both are good. I found the best was to put them in the whole time, then brown it in the oven at the end – I used a crockpot that was oven safe. Both are good, it just depends if you want that extra crunch.

Slow Cooker Ritz Chicken

Ingredients

  • 1/2 cup Land O’ Lakes butter, melted
  • 1 1/2 cups crushed Ritz crackers
  • 4 to 6 boneless skinless chicken breasts
  • 10 3/4 ounce can Campbell’s cream of chicken soup
  • 1 pint Daisy sour cream

Instructions

  1. Combine the soup and sour cream in a bowl and set aside. In another bowl mix together crackers crumbs and melted butter.
  2. Place chicken in a slow cooker that has been sprayed lightly with non stick cooking spray. Spoon the soup/sour cream mixture over the chicken and then sprinkle with the Ritz cracker topping. Cover and cook on low for 7 to 8 hours, or cook on high for 4 to 5 hours.
