Slow Cooker Gumbo (Whole30, Paleo)

Awesome! My husband and I just love it. I made a double batch with the intention of freezing half for a date in the future. We finished all in a day and a half (lunch, dinner, lunch)

I will certainly try this. I love Shrimp Creole which is what this recipe should be called. This one looks especially tasty with the addition of sea bass. Even though this does not resemble a gumbo, (No roux?) I’m hooked on the Instant Pot preparation of it.

Slow Cooker Gumbo (Whole30, Paleo)


Ingredients

  • 1 tsp oregano
  • 1/2 tsp of cayenne pepper (optional)
  • 1 tbsp of cajun seasoning
  • 1 tsp thyme
  • Salt and pepper to taste
  • 2 lb chicken (combine breast and thighs)
  • 1 lb of andouille sausage
  • 1 red onion
  • 1 garlic bulb
  • 3 celery stalks
  • 2 leeks
  • 1 bell pepper
  • 1/2 lb of okra fresh or frozen
  • 2 bay leaves



Directions

  1. Chop all the vegetables or put in a food processor
  2. Cut the sausage into half-inch coins
  3. Place the chicken, sausage, and vegetables in your crockpot or slow cooker
  4. Place your spices and dump a half cup of water if necessary
  5. Set the crockpot on high and let cook for about 4-5 hours
  6. Take out and enjoy with a side of cauliflower rice and broccoli!
