Keto Blueberry Cheesecake Squares

Looks so good but I was wondering… What happened to the crust that’s in the picture? There is no crust recipe.

Looks delicious. Appears there a crust on this cheesecake. Is there? If so, is Leto friendly?

Cheesy Spinach Stuffed Chicken Breast - Keto


Ingredients

  • 1/2 tsp Baking Powder
  • 1/2 cup Frozen Blueberries
  • 4 tbsp Erythritol
  • 2 tsp Vanilla Extract
  • 10 oz Butter
  • 6 large Eggs, Room Temperature
  • 4 oz Cream Cheese, room temperature


Instructions

  1. Preheat oven to 320 degrees. Line an 8 inch square pan with parchment paper and spray with cooking spray.
  2. Melt the butter. Place all ingredients in a blender(except the blueberries) and blend until smooth. A stick blender also works well just make sure the ingredients are well blended. Make sure to taste for sweetness. Add more sweetener if desired.
  3. Pour into the lined pan. Drop the blueberries on top of the cheesecake.
  4. Bake in the 320 degree oven for 20-30 minutes. The center should be done.
  5. Let cool completely the cut into 9 squares.
