Yum, cheeseburger soup sounds just right for me. We are all soup lovers, especially the boys. I think they will like this very much 🙂
I have never heard of cheeseburger soup before, but I am intrigued! It looks super yummy.
And I can’t agree more, although the internet is a great source of information and communication, we don’t have time to just exist, think and breathe! I am trying hard now to just actually wait in line, not pull out the phone and leave it when I don’t actually need it. But it’s hard, we are just so addicted, unfortunately.

Ingredients
- 1 1/4 cup heavy whipping cream
- 1 teaspoon of Xantham Gum
- 3 cups chicken broth
- 3 cups of shredded cheddar cheese
- 1 pound ground beef
- 8 slices of bacon chopped
- 1/2 onion diced
- 2 teaspoons minced garlic
- 1 tablespoon steak seasoning
- 1 cup frozen riced cauliflower
- 4 tablespoons butter
Instructions
- In a stock pot, brown the ground beef.
- Add in the diced bacon, diced onion, seasonings, riced cauliflower, and butter.
- Continue cooking on medium head until the onions and cauliflower are soft.
- Stir in the chicken broth and the heaving whipping cream.
- Bring the soup mixture to a boil, reduce heat to low and simmer for 15 minutes.
- Stir in the cheddar cheese. Continue stirring until it is melted.
- Whisk in the Xanthan gum. Cover for 5 minutes on low while the soup thickens.
- Serve with more cheese, bacon, sour cream and any other toppings you would like.
